Good old fashioned Oatmeal Cookies

Okay, so sometimes I am in the mood for the traditional. I want something I had as a kid. Cookies have gotten so fancy these days. Here is a recipe I have been making a lot. I make a huge batch since my kids can eat a dozen in a day.

1 1/4 cup Earth Balance or homemade vegan butter ( see recipe)
1/2 cup canola oil
1 1/3 cup sugar
1 1/3 cup brown sugar
Cream these items together till light and fluffy. I use a stand mixer but a hand one will do.
Add: 2 teaspoons vanilla and 1/4 non-dairy milk. Cream until even fluffier

Sift together:
1 1/2 all purpose flour
1 1/2 cup whole wheat flour ( I use sprouted wheat)
1 teaspoon salt
1 1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice

Mix dry ingredients into wet until combined.

Add and mix in with a wooden spoon:
3 cups quick cook oats
1 cup raisins or currants. I like currants.

Bake at 350 degrees for 15 minutes.

Serve warm with cold soy or a rice milk.
