Missi’s Blueberry Cake

My friend Missi D’Arcy is an amazing vegan baker. I can’t wait to try this recipe especially because there are so many fresh blueberries available now!

Missi’s Vegan Blueberry Coffee Cake

Streusel

½ cup chopped walnuts

1/3 cup packed brown sugar

¼ cup flour

½ tsp cinnamon

3 TBL firm earth balance *(or other non-hydrogenated margarine)

Coffee Cake

2 cups flour

1 cup sugar

3 tsp baking powder

1 tsp salt

1/3 cup earth balance*

1 cup Almond Milk (or other non-dairy milk)

¼ cup organic unsweetened applesauce

1 cup fresh blueberries (if using frozen thaw & drain well)

 

Prepare streusel and set aside. Preheat oven to 350. Combine Coffee Cake ingredients together with a mixer on medium for approx. 2 minutes. Stir in blueberries.

Pour mixture into greased 13x9x2 pan, sprinkle top with streusel and bake for 35 minutes

You can also use a 9x9x2 pan but cook for 45 minutes.
